Ingredients:
- 1 cup fresh blueberries
- 2 cups milk

- 1 teaspoon vanilla extract

Instructions:
- In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt until smooth. Place the saucepan over medium heat and cook the mixture, stirring constantly until it begins to thicken and bubble, about 5-7 minutes.
- In a separate bowl, whisk the egg yolks until well blended. Gradually add a small amount of the hot milk mixture into the yolks, whisking continuously to temper the eggs. Once combined, pour the egg mixture back into the saucepan with the remaining milk mixture.
- Continue to cook the pudding for another 2-3 minutes, stirring until it thickens to a custard-like consistency. Remove the saucepan from heat and stir in the lemon juice, lemon zest, and vanilla extract. Let the pudding cool slightly.
- To assemble the parfaits, start by adding a layer of lemon pudding at the bottom of each serving glass. Follow with a layer of fresh blueberries, then another layer of pudding. Repeat the layers until the glasses are filled, finishing with a layer of pudding on top.
- Chill the parfaits in the refrigerator for at least 30 minutes to set. Just before serving, top with whipped cream and a few extra blueberries for garnish.
