Ingredients:
- 2 cups whole milk
- 3 large eggs
- 1/2 cup granulated sugar
- 2 tablespoons matcha green tea powder
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions:
- Preheat your oven to 325°F (160°C). To prepare for the custard, set out four ramekins and place them in a baking dish, which will be used for the water bath during baking.
- In a medium saucepan, heat the whole milk over medium heat until it just begins to steam, but don’t allow it to boil. Remove from heat and let it cool slightly while you prepare the egg mixture.
- In a mixing bowl, whisk together the eggs, granulated sugar, matcha green tea powder, vanilla extract, and salt until fully combined and slightly frothy. It’s important to mix well to guarantee the matcha is evenly distributed.
- Gradually pour the warm milk into the egg mixture while continuously whisking to temper the eggs. This prevents the eggs from scrambling and allows the custard to remain smooth.
- Once combined, strain the mixture through a fine-mesh sieve into another bowl to remove any lumps or undissolved matcha. Carefully pour the custard into the prepared ramekins.
- Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins. This water bath helps the custard cook evenly and prevents it from cracking.
- Bake in the preheated oven for 25-30 minutes, or until the custards are set but still have a slight jiggle in the center. Remove from the oven and let them cool before refrigerating for at least 2 hours.
Extra Tips:
When whisking the matcha, make sure to sift it first to avoid clumps. If you prefer a sweeter pudding, feel free to adjust the sugar to your taste.
You can also experiment with different flavorings, such as almond extract or a hint of citrus zest, to complement the matcha. For serving, consider garnishing with a dollop of whipped cream or a sprinkle of crushed pistachios for added texture and flavor.
