Ingredients:
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 3 large egg yolks
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 4 ounces bittersweet or semisweet chocolate, chopped
- Pinch of salt
Instructions:
- In a medium saucepan, combine the whole milk, granulated sugar, cocoa powder, and a pinch of salt over medium heat. Whisk continuously until the mixture is smooth and starts to heat up, but don’t let it boil.
- In a separate mixing bowl, whisk together the egg yolks and cornstarch until well combined. Once the milk mixture is hot, gradually pour a small amount of it into the egg yolk mixture while whisking constantly to temper the eggs. This will prevent them from scrambling.
