This Coconut and Pineapple Steamed Pudding is a delightful and tropical dessert that combines the rich flavors of coconut and the sweetness of pineapple into a soft, moist pudding. The steaming process allows the pudding to maintain its moisture and fluffiness, creating a melt-in-your-mouth experience.
Perfect for summer gatherings or special occasions, this dessert is sure to impress your guests with its unique flavor and appealing presentation. The combination of coconut milk and crushed pineapple gives this pudding its signature tropical taste, while the addition of shredded coconut adds texture.
Served warm and perhaps topped with a dollop of whipped cream or a scoop of vanilla ice cream, this pudding isn’t only a treat for the taste buds but also a visual delight. Whether you’re a fan of steamed desserts or simply looking to try something new, this Coconut and Pineapple Steamed Pudding is a must-try.
Ingredients:
- 1 cup all-purpose flour
- 1 cup sugar
- 1 cup coconut milk
- 1/2 cup crushed pineapple, drained
- 1/2 cup shredded coconut
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- Butter or oil (for greasing the mold)
Instructions:
- Begin by greasing your pudding mold or a heatproof bowl with butter or oil to prevent sticking. Set aside. Fill your steamer with water and bring it to a simmer while you prepare the pudding batter.
- In a mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Whisk the dry ingredients together until thoroughly mixed.
- In another bowl, combine the coconut milk, crushed pineapple, shredded coconut, vanilla extract, and eggs. Whisk the wet ingredients until well combined and smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix, as this can make the pudding dense.
- Pour the batter into the prepared pudding mold, covering it with a piece of parchment paper and then a lid or foil to trap the steam. Place the mold in the steamer and steam for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Once cooked, carefully remove the pudding from the steamer and let it cool for a few minutes before inverting it onto a serving plate. Serve warm, optionally topped with whipped cream, ice cream, or fresh fruit.
Extra Tips:
For an extra burst of flavor, consider adding a pinch of nutmeg or cinnamon to the dry ingredients. You can also personalize the pudding by adding chopped nuts or dried fruits to the batter.
When steaming, confirm that the water is simmering gently to prevent the pudding from cooking too quickly. If you don’t have a steamer, you can create a makeshift one by placing a heatproof bowl on top of a trivet in a large pot filled with water, covering it with a lid while cooking.
