Banana Oatmeal Cookies are a delightful and healthy treat that combines the natural sweetness of ripe bananas with the wholesome goodness of oats. Perfect for a quick breakfast on-the-go or a satisfying snack, these cookies are packed with flavor and nutrients.
The use of bananas not only adds sweetness but also helps to keep the cookies moist, while oats provide a hearty texture that makes them filling and delicious. These cookies are incredibly versatile and can be customized with various mix-ins such as chocolate chips, nuts, or dried fruits.
They’re a great way to use up overripe bananas and make for a wonderful alternative to traditional cookies. With just a few simple ingredients, you can whip up a batch that’s sure to please both kids and adults alike!
Ingredients:
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup flour (all-purpose or whole wheat)
- 1/4 cup brown sugar
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Optional: 1/2 cup chocolate chips or nuts
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent the cookies from sticking.
- In a mixing bowl, mash the ripe bananas until smooth. Add the rolled oats, flour, brown sugar, honey (or maple syrup), vanilla extract, baking soda, and salt. Mix until well combined, making sure there are no dry spots.
- If desired, fold in chocolate chips or nuts into the cookie dough for added flavor and texture.
- Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden and the cookies are set. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Enjoy your homemade banana oatmeal cookies as a snack or a sweet breakfast treat!
Extra Tips:
For a chewier cookie, try using old-fashioned rolled oats rather than quick oats. You can also add spices such as cinnamon or nutmeg for an extra flavor kick.
If you’re looking for a gluten-free option, simply substitute the flour with a gluten-free flour blend.
