This Spiced Pumpkin Pudding is a warm and comforting dessert that’s perfect for fall and winter gatherings. With the rich flavors of pumpkin, warm spices like cinnamon and nutmeg, and a creamy texture, this pudding provides a delightful way to enjoy seasonal ingredients.
It’s an easy-to-make treat that comes together quickly in the Instant Pot, allowing you to focus on other festive preparations while it cooks. The Instant Pot not only speeds up the cooking process but also guarantees that the pudding is flawlessly creamy and infused with flavor.
This recipe is versatile, allowing you to serve it warm or chilled, and it pairs beautifully with whipped cream or a sprinkle of toasted pecans. Whether you’re hosting a holiday dinner or simply craving a sweet treat, this spiced pumpkin pudding will surely satisfy your taste buds.
Ingredients:
- 1 cup pumpkin puree
- 1 cup milk (or dairy-free alternative)
- 1/2 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- Whipped cream (for serving, optional)
Instructions:
- In a mixing bowl, combine the pumpkin puree, milk, sugar, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Whisk together until the mixture is smooth and well combined, making sure there are no lumps from the pumpkin puree.
- Pour the pumpkin mixture into the Instant Pot’s inner pot. Secure the lid and set the valve to the sealing position. Select the “Manual” or “Pressure Cook” option and set the cooking time for 10 minutes on high pressure.
- Once the cooking time is complete, allow the Instant Pot to naturally release pressure for 10 minutes. Afterward, carefully switch the valve to the venting position to release any remaining pressure.
- Open the lid and stir the pudding well to make sure it’s creamy and smooth. If the pudding is too thick, you can stir in a bit more milk until you reach your desired consistency.
- Transfer the pudding to individual serving dishes or a large bowl. Allow it to cool slightly before serving warm, or refrigerate for a couple of hours if you prefer it chilled.
Extra Tips:
For a more decadent touch, consider adding a dollop of whipped cream or a sprinkle of toasted nuts on top before serving. You can also customize the spices according to your taste; for example, adding a pinch of cloves can enhance the flavor profile.
If you have leftovers, store them in an airtight container in the refrigerator for up to three days, and simply reheat them gently on the stove or in the microwave before serving.
