Caramel Banana Pudding is a luscious and indulgent dessert that combines the rich flavors of caramel with the sweetness of ripe bananas, all enveloped in a creamy pudding. This dish is perfect for any occasion, whether it’s a family gathering or a dinner party, and is sure to impress with its delightful taste and presentation.
The Instant Pot makes the preparation quick and easy, allowing you to whip up this decadent dessert in no time. The layers of caramel, banana slices, and velvety pudding create a beautiful and delicious dessert that can be served warm or chilled.
The combination of textures from the smooth pudding and soft bananas, complemented by the sweetness of caramel, creates a comforting dessert that appeals to both kids and adults alike. Serve it in individual cups for an elegant touch, or in a large bowl for a casual gathering.
Ingredients:
- 2 cups milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3 ripe bananas, sliced
- 1/2 cup caramel sauce (store-bought or homemade)
- Whipped cream (for topping, optional)
Instructions:
- In a mixing bowl, whisk together the sugar, cornstarch, and salt until well combined. This will guarantee that the pudding is smooth and free of lumps when cooked.
- In the Instant Pot, pour in the milk and set it to the sauté function. Gradually whisk in the dry mixture until it’s fully dissolved and there are no lumps. Continue to cook while stirring for about 2-3 minutes until the mixture starts to thicken.
- Once thickened, turn off the sauté function and stir in the vanilla extract. Switch the Instant Pot to the ‘pressure cook’ setting, secure the lid, and set it to cook on high pressure for 5 minutes.
- After the cooking time is up, allow the pressure to release naturally for about 10 minutes, then perform a quick release for any remaining pressure. Carefully open the lid and stir the pudding until smooth.
- To assemble, layer the bottom of serving dishes with a spoonful of pudding, followed by a layer of sliced bananas, and drizzle with caramel sauce. Repeat the layers until the dishes are filled, finishing with a layer of pudding on top.
- If desired, top with whipped cream and an extra drizzle of caramel sauce before serving. You can serve it immediately or refrigerate it for an hour to allow the flavors to meld.
Extra Tips:
For an added richness, consider using whole milk or a combination of milk and heavy cream. You can also enhance the flavor by adding a pinch of cinnamon or nutmeg to the pudding mixture.
If you prefer a textural contrast, you might sprinkle some crushed graham crackers or nuts on top before serving.
